- WOW! This is by far the greatest. My spouse was dubious at first, but now he adores it. Because rice absorbs liquid, I prepare half the rice and put it in half of the soup to enjoy right away, and freeze the other half of the soup without the rice. Then make up and add the rice later when we have the rest. We also add around 3 green peppers, cut into large bits, and more chicken broth as needed.
Ingredients:

1 pound LEAN ground beef
1 large onion, chopped…
1 cup uncooked rice or 2 cups cooked rice (I prefer wild rice)
1 can Hunts flavored diced tomatoes (for example, red pepper and fennel, roasted garlic, sweet onion) (14.5oz can)
1 (14.5oz) can tomato sauce
1 teaspoon dried oregano
1 teaspoon basil
12 teaspoon salt 14 teaspoon pepper
1 box (32oz) chicken stock
2 c. water
2 tbsp beef stock powder
3 bell peppers (I use 1 large green pepper, followed by 4-5 red and 4-5 yellow BABY bell peppers)
Optional cheese for topping
Optional garnish: fresh cracked black pepper
